Stuffed Peppers Slow Cooker Recipe

Ingredients

  • 1 pound lean ground turkey or beef, uncooked
  • 5-6 multi color bell peppers, remove seeds and tops off
  • 1 cup black beans, rinsed and drained
  • 1 cup rice, cooked use white , brown or mexican rice.
  • ¾ cup shredded Mexican cheese, plus more for topping, if desired
  • 1 cup red enchilada sauce
  • 1 cup frozen corn, thawed
  • ½ teaspoon ground cumin
  • ½ tablespoon chili powder
  • salt and pepper to taste
  • cilantro
  • sour cream
  • shredded mexican cheese
  • salsa
  • enchilada sauce
  • avocado
  • lime wedges

Method

Step 1

Spray the slow cooker with some nonstick oil cooking spray and place the peppers inside

Step 2

In some large bowl combine rice , corn , black beans , enchildad sauce , cheese , seasoning and a pinch of salt and pepper with the ground turkey or beef .

Step 3

Put the filling into each pepper that we have.

Step 4

Cook on hight for 2-3 hrs or on low for 4-6 hrs , until the meat is cooked through

Step 5

Serve with some of the optional toppings , goes great with a side salad !
