Perfect for weekend meals , this vegan grilled zucchini ratatouille vegan boats it’s absolute delight.
Remove by scooping of flesh from the center of the zucchini to make boats reserve the flesh balls. Preheat a bbq grill to medium-high.
Heat 1 tbsp. EVOO in the large skillet over medium heat; include the onion and also cook for 5 minutes. Stir in the garlic and cook for 1 min. Add the leftover 2 tbsp. EVOO, the eggplant and zucchini remanings; cover and let it cook for 8 min. Add the tomato vegetables and cook, mixing, until the blend is thick, up to 5 minutes. Stir inside the parsley; season along with pepper and salt.
Fill the zucchini shells with all the ratatouille, sprinkle with your cheese and grill, covered, over medium-high until your cheese is melted plus the shells are slightly softened.
You can also cook this in an oven at 375 , and don't forget to add the cheese last .
